Who wouldn’t want to indulge in the joy of eating sweet, nutty and moist desserts? Words cannot describe the joy of eating delicious sweets and cakes. And yes, it definitely has the power to fix your blues in no time. You can. Here are some recipes.
1. Makhane ki kheer (2 servings)
This fiber-rich, veganized traditional Indian kheer is a rich, creamy dessert loved by the whole family and a quick snack during Navratri, Ekadasi, or Maha Shivratri fasts.

500ml vegetable milk
1 cup makana
7-8 cashew nuts
3 tbsp jaggery syrup
3-4 sprigs of saffron
1/2 teaspoon cardamom powder
2 teaspoons chironji seeds, soak for 30 minutes
1 teaspoon shatavari powder
1 teaspoon vegan ghee
2 tablespoons pistachios (for garnish)
2 tsp dried rose petals for garnish
Method:
1. Heat coconut oil in a bowl and lightly roast the makana until crispy.
2. When cool, grind ¼ cup makana with cashews to a coarse powder and set aside. 3. Soak the saffron in warm milk so that it starts to color.
4. Heat the milk in a heavy-bottomed saucepan and add the makana, cashew powder and jaggery syrup.
5. Once boiling, add shatavari powder, cardamom powder, chironji seeds and saffron milk.
6. Simmer over medium-low heat until thickened, about 7-10 minutes.
7. Finally add whole makana and simmer for a few more minutes and remove from heat.
8. Garnish with rose petals and pistachios. Serve warm or chilled.
Variations: Macana can be replaced with brown rice seviyan, cooked brown rice, cooked quinoa, cooked millet, and washed red rice poha.

2. Berry panna cotta (for 3 people)
With the addition of berry compote and stress-relieving ashwagandha goodness, this berry panna cotta is worth every spoonful. So, if you’re looking to make a dessert for two or a crowd, sweet and creamy panna cotta is the way to go.

400ml thick coconut milk
2 teaspoons agar powder
1 teaspoon vanilla essence
4 tbsp jaggery syrup
1 teaspoon ashwagandha powder
a pinch of salt
¼ cup berry compote
Method
1. Mix agar with 2 tablespoons of coconut milk to make a slurry and set aside.
2. Heat remaining milk with vanilla extract, ashwagandha powder and jaggery syrup over low to medium heat for 3-5 minutes.
3. Then add the agar slurry and continue cooking for another minute until it starts to thicken.
3. Pour into a bowl and allow to cool slightly before transferring to the refrigerator for 1-2 hours. 4. Top with chopped berries or berry compote and ready to eat.
Variations: Instead of berries, you can use other fruits such as mango + basil, peach + cinnamon, pineapple + mint combinations.

3. Chunky brownies (9 pieces)
These chunky brownies are super moist, mega chocolatey, rich and fuzzy, everything a chocolate lover could dream of and even better without refined sugar, flour or oil.
material:
1 cup oat flour
½ cup nut butter
½ cup applesauce
1/3 cup coconut sugar
¼ cup jaggery syrup
¼ cup cocoa powder
2 tablespoons vegetable milk
1½ tsp baking powder
1 teaspoon maca powder
100g chopped dark chocolate
Method:
1. Mix nut butter, applesauce, coconut sugar, jaggery syrup and milk.
2. Add oat flour, cocoa powder, maca powder and baking powder and mix well until smooth. Add about half of the dark chocolate and mix. If the mixture is too thick, add another 1-2 tablespoons of milk.
3. Pour into molds and top with remaining chocolate.
4. Bake in an oven preheated to 180°C for about 20-25 minutes until the toothpick is clean.
5. Cool completely and cut into squares.fun
