Fort Knox, Kentucky – Soldiers enjoyed a specially crafted Black History Month meal at the dining facility on February 28, with traditional cultural options with a healthier twist.
Laura Bottoms, Chief of Fort Knox Nutrition Care Services, said the effort is part of an effort to move menu items to the Go for Green 2.0 program. This is an Army-wide program to provide soldiers with high-performance, nutritionally healthy food.
“The plan was to embrace different cultures through holiday meals. [food options] By ensuring that we can make more traditional yet healthy foods, “Bottoms said. “This shows that those foods are delicious and good for us, yet they can preserve the cultural heritage of our diet.”
The meal was designed by Fort Knox Installation Food Program Manager Dana Womak. Danawomac helped the food offered highlight the culture of Black History Month and herald the arrival of National Nutrition Month. The theme for March this year is “Celebrations of World Culture”.
The Fort Knox community has been invited to submit their favorite cultural recipes featuring healthy highlights and has the opportunity to be featured on the Ireland Health Clinic website. The selected submissions will be selected for posting throughout the month.
