6 Remove bones and skin from chicken thighs
-
1 20 oz pineapple ring, discard syrup
-
1 red bell pepper, cut into rings or strips
-
3 garlic cloves (minced)
-
2 green onions, chopped
-
1 tablespoon minced ginger
-
1 red pepper, chopped (or 1/2 to 1 teaspoon dried red pepper flakes)
-
1.5 cups pineapple juice
-
1/4 cup brown sugar
-
2 tablespoons honey
-
2 tablespoons ketchup
-
1 tablespoon mustard
-
3 tbsp soy sauce
-
salt and pepper to taste
instructions
- Place chicken in a lightly oiled pan.
- Combine pineapple juice, ketchup, soy sauce, mustard, brown sugar, honey, salt and pepper, ginger, garlic, green onions and red pepper in a bowl. Pour over chicken.
- Place pineapple rings on top of chicken.
- Cover and simmer for 5-6 hours on low heat and 3-4 hours on high heat. With 1 hour left, place the peppers on top of the pineapple.
- option: If you prefer a thicker sauce, transfer some of the sauce to a saucepan on the stovetop and place over medium heat. Make a slurry of water and cornstarch. Gradually stir the slurry until it reaches the desired consistency.
