1 pound halibut fillet

1/2 cup extra virgin olive oil

1/4 teaspoon paprika

2 cloves of garlic

1.5 cups cherry tomatoes

1/2 cup bottled roasted red peppers

1 lemon, half squeezed, half for garnish

instructions
tapenade
- Start by mincing olives, capers, roasted red peppers and garlic. Halve the cherry tomatoes. Finely chop fresh herbs.
- Heat 2-3 tablespoons of olive oil in a frying pan over medium heat. Add halved cherry tomatoes and garlic and stir well. Cook until the garlic begins to smell, about 2 minutes. Stir in chopped roasted peppers and cook for 1 to 2 minutes. Stir in chopped herbs. Please mix. Add chopped olives and capers and cook for a few more minutes. Add a little lemon juice, stir, and drizzle with a little more olive oil.

- Season both sides of halibut with paprika, coarsely ground pepper, and salt. Then lightly dust both sides with flour.
- Heat the remaining oil in a frying pan over medium heat. Add grouper and cook 10 minutes per inch thick, turning halfway through.
- Place the halibut on a plate and sprinkle generously with the prepared tapenade. Garnish with some fresh herbs and a lemon wedge.
