- 3 cups cauliflower rice
- 6 eggs (separate)
- 1 1/4 cups almond flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 6 tablespoons melted butter
- 2 cloves of minced garlic
- 1 tablespoon dried thyme
- 1 tablespoon chopped parsley
Here’s how to make it.
- Place in a bowl and microwave cauliflower for 3-4 minutes or until tender. Allow to cool, then transfer to kitchen paper and squeeze out the water.
- Separate the yolks from the whites. Place the egg whites in a bowl and whisk until stiff peaks form. set aside.
- In a medium bowl combine almond flour, baking powder, salt, egg yolks, melted butter, garlic and 1/4 of the whipped egg whites. Stir until well blended.
- Add cauliflower;
- Mix all remaining egg whites. Add thyme and parsley. Be gentle so the mixture remains fluffy. Transfer batter to a parchment-lined 9×5-inch loaf pan.
- Bake in preheated 350°F oven for about 45-50 minutes or until golden brown on top. Allow bread to cool completely before slicing.
