- 2 tablespoons extra virgin olive oil
- 2 pear (very firm, cored, cut in half)
- 1 pound sweet potato, peeled and cut into 2-inch pieces
- 2 shallot, peeled and cut in half lengthwise
- 1/Four teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1 head Radicchio (divided into 8 pieces)
- 2 horses butter lettuce (tear off)
- 1 cup Gorgonzola cheese (crushed)
- 1/4 cup shelled pistachio
- 1 orange, peeled and diced
