For 4 people
material:
- 1 tablespoon of olive oil
- 1 onion, diced
- 3 pieces of garlic, crushed
- 4 small chorizo sausages, 2 carrots, diced
- 1 zucchini, 1 teaspoon salt flakes sliced in half a month
- 1 teaspoon of smoked paprika 10 cherry tomatoes, halved 2 x 250g microwave packet
- Long white rice or brown rice 200ml vegetable stock
- 1 red pepper sliced on strips, 1 green pepper sliced on strips, leafy vegetable salad, served
Method:
- Heat olive oil over medium heat in a large saucepan. Add onions, garlic and chorizo and simmer for 3-4 minutes until the chorizo turns light brown. Add carrots, zucchini, salt, paprika and cherry tomatoes and stir.
- Meanwhile, microwave the rice according to the instructions in the packet. Put the rice in a pan with the vegetable stock and simmer, and simmer for 5 minutes with occasional stirring. Stir the red and green peppers and cook for another 5 minutes.
- At this stage, your kitchen scent should be on the next level. I’m hungry, so let’s do a taste test and check the seasonings.
- Divide the rice and vegetables into plates and enjoy with your favorite leafy salad.
