I used to think that date-based truffles were out of reach for many. All the recipes I’ve seen require a food processor or a powerful blender. But then I started wondering, what did people do before these modern conveniences came? Date paste is not exactly a modern invention. After all, all you need is hot water and a fork! When softened, dates can be crushed almost as easily as bananas.
I used that low-tech method to chew the energy of these mocha fudges. But I used a cheap spice grinder to grind cashew nuts. If you don’t have one, you can substitute 1 ounce of almond meal or 2 tablespoons of cashew butter (the mixture may be a little sticky).

- Place the chocolate chips in a microwave-compatible bowl. Heat in the microwave for 1 minute and melt vigorously in a whisk. If it is not completely melted, heat it for another 15 seconds and whisk vigorously with a whisk. Do not overheat the chocolate. It will burn if overheated.
