This instant dosa takes just 10 minutes to prepare and is ready to serve. In places like Bangalore, set dosas are served with coconut chutney and sag (South Indian-style mixed vegetable curry). Here I am making a quick version of Set Dosa made with Poha, Suzi and Curd. It may remind you of poha dosa or atkala dosa without fermentation process. Instead, I use fruit salt to leave the dough. To make an instant set dosa, first soak the poha for a few minutes and grind it in a mixer grinder along with the streaks, curds and salt. Transfer the mixture to a bowl and add water until desired consistency. Then add fruit salt and mix well. Put a ladle of batter in a frying pan with oil and bake from the bottom. When finished, serve with coconut chutney or your favorite chutney. Podi masala can also be sprinkled on for added flavor.
