Easy baked arancini recipe.
To make baked arancini you will need:
for arancini
- 2 cups arborio rice
- 5 cups chicken stock
- 1 block of gruyere or mozzarella cheese, diced
- 1/2 cup grated parmesan cheese
- 1 cup bread crumbs
- 1 cup whole grain
- 4 eggs, split into 2 and beaten
- 1/4 cup chopped parsley
- salt + pepper
- cooking spray
in tomato dipping sauce
- 2 tablespoons olive oil
- 1 chopped onion
- 2 cloves of crushed garlic
- 400g canned tomato
- 1 teaspoon dried oregano
- 1 tablespoon balsamic vinegar
- juice of half a lemon
- salt and pepper to taste
How to make baked arancini:
- Bring 5 cups of chicken stock to a boil. Rinse the rice until the water runs clear and add it to the pot. Slowly add a spoonful of warm dashi stock to the rice and stir until absorbed. Repeat until rice is fully cooked, but not mushy.
- Place the rice in a bowl and chill in the refrigerator for 30 minutes.
- Preheat the oven to 220 degrees Celsius and line the baking dish with baking paper.
- Remove the rice from the refrigerator and place it in a large mixing bowl. Add 2 beaten eggs, salt and pepper, 1/2 cup Parmesan cheese, and chopped parsley. Mix well.
- Take 1-2 tablespoons of the rice mixture and form a ball. Add 1-2 cubes of cheese by pressing down the center with two fingers. Wrap the rice around the cheese.
- Place the balls in the second egg mixture to coat, then the flour and bread crumbs. Repeat until all rice mixture is used.
- Spray arancini balls with cooking spray and place in oven for 25 to 30 minutes or until balls are golden brown.
- While the arancini are in the oven, heat the olive oil in a medium saucepan to form the sauce and sauté the onions until soft.
- Add the garlic and simmer for 1 minute, then add the rest of the ingredients and stir well.
- Bring to a boil, then reduce heat and simmer until slightly thickened
- Remove the arancini from the oven, season with freshly grated parmesan, salt and pepper, and serve with the sauce!
Tip: The cheese in the arancini can be quite hot, so let it cool, especially if serving to children.
