Kale is very healthy, but it is not always the easiest ingredient to combine with good food. But you don’t have to, says Melanie Johnson, our vegetable garden cook. “It’s related to health and detoxification, but it can also taste great,” she says.
Below are some great recipes, but there are also simpler ideas. For example, you can make a kale and apple salad in just a few minutes. A few handfuls of kale (remove ribs and chop into bite-sized pieces), mix lemon juice and salt to soften, then diced apples, handful of grated palmezans and some white chopped almonds. All topped with extra virgin olive oil and a small apple cider vinegar.
Recipe: Honey, soy sauce, chicken, egg noodles, and kale
material
For 4 people
- 4 chicken breasts
- 2tspns garlic grains
- 1 red onion, peel and cut into wedges
- 100g kale, remove stems and cut into bite-sized pieces
- 75g of soybeans
- Egg noodles 200g
- Fresh coriander to serve
For sauce
- 3tbspns honey
- 2 pieces of garlic, grated
- 4tbspns soy sauce
- Sesame oil 2tspns
- ½ tspn chili flakes
Method
Set the oven to 180 ° C / 350 ° F / gas mark. Four. Sprinkle with garlic grains and gently hammer the chicken breast to soften it before adding the seasoning. Burn both sides in a large frying pan with neutral oil. Place the chicken in a baking tray and finish in the oven for about 20 minutes or until the juice is clear.
Put the onions in the same frying pan and fry until tender. Add kale and soybeans, mix well and cook gently.
Cook the egg noodles according to the wrapping instructions and turn them over into kale and onions. Mix the sauce together with a whisk and pour it. Mix everything.
Put the cooked chicken breast back in a large saucepan and sprinkle with coriander. If you like spicy food, you can also add chili peppers.
