World Vegan Day 2022: Every year on November 1st, people around the world celebrate World Vegan Day. The vegan lifestyle is slowly taking hold as more and more people are turning to a vegan diet not only for its health benefits but also for showing support in preventing animal cruelty. Vegan foods and dishes are appearing on menus from restaurants to airlines. This creamy vegan pasta will ditch the classic mac and cheese for its creamy, tangy flavor. The sauce consists of a protein-rich concoction of white beans, nutritional yeast, and lemon juice to make your taste buds crave even more.

- Boil the broccoli with the pasta. Add the broccoli 3 minutes before the pasta is done.
- Make a cream with flour, oil, salt, pepper, oregano and your favorite non-dairy milk. The boiling time is about 8 to 10 minutes, so please start with boiling water for pasta.
- Add the pasta and broccoli to the cream, mix and serve hot.

Swap the meat for smoky grilled mushrooms in this delicious fajita recipe.

- Heat a grill pan over medium heat and line up thinly sliced blue, yellow, and red paprika. Place mushrooms and onion wedges in another pan.
- Meanwhile, in a small bowl, whisk together the avocado oil, minced garlic, chili powder, cumin, salt, and pepper.
- Drizzle 1 tablespoon of this oil over the peppers and the rest over the mushrooms and onions.
- Add some vinegar to the mushrooms.
- Grill peppers for at least 8 to 10 minutes, tossing frequently until browned.
- Grill the mushroom and onion wedges for about 8 to 10 minutes as well.
- Once the vegetables are cooked, remove from heat and season with lemon, salt, pepper and a few drops of chili powder to taste.
- Cut the mushrooms into strips.
- Serve mushrooms, peppers and onions with tortillas, guacamole, jalapeños, tomatoes, coriander, salsa and a slice of lemon.

- In another bowl, whisk together olive oil, 3 tablespoons vegan mayonnaise, 1.5 tablespoons apple cider vinegar, 2 teaspoons mustard sauce, maple syrup, crushed garlic, salt and pepper.
- Add broccoli, onions, cucumbers, and cherry tomatoes.
- Preheat your oven to 350°F and line a baking tray with baking paper.
- Add almonds, cashews and walnuts along with the maple syrup and bake for 10-15 minutes.
- When cool, pour over salad.

- In another blender, add raspberries, lemon juice and maple syrup and blend until smooth. Pour this mixture over the frozen cheesecake layer and smooth. Freeze for 5 to 6 hours or overnight.
- When ready to serve, thaw for 30 minutes before slicing and serving.
