Turn on the heat and simmer for about 4 minutes until the broth has reduced slightly and becomes syrupy, then remove from heat.
- Remove the cake from the oven and let it cool while still in the mold. Remove from pan while still warm, remove backing paper, and place cake on a wire rack set on a baking tray or similar. Gently spoon half of the lemon syrup (step 4) into the cake and let it soak in. Do the same with the remaining syrup by brushing the edges and sides of the cake with a spoon, then brush the edges and sides of the cake with the last syrup.
4. Healthy Christmas cake

- Preheat oven to 175°C or 350°F. Grease an 18 cm round cake tin. A springform pan or cake mold can also be used.
- Place zest, juice, raisins, currants, cranberries, and almonds in medium saucepan. Heat until the juice begins to boil. Reduce heat. cover. Simmer for 5-10 minutes, stirring occasionally.
- Place almond meal, banana, dates, spices, vanilla and salt in processor. Blend on high speed until mixture resembles a smooth, thick batter. Stir in raisin mixture. Spoon the cake mix into the prepared tin and use your damp hands to smooth the top of the cake.
- Bake for 30 minutes. Cover with foil and bake for another 15 minutes. Remove from the oven and let cool in the mold for 30 minutes. If using a springform pan, remove the sides and let the cake cool completely.

- In a medium bowl, stir together flour, sugar, cocoa powder, baking soda and salt. In another bowl, combine pumpkin, egg, oil and vanilla. Add flour mixture; Stir until blended. Spoon into prepared muffin cups and fill 2/3 to 3/4 full. Sprinkle with nuts or chocolate chips if desired.
- Bake for 12 to 15 minutes or until a toothpick sticks through the center. Chill in pan on wire rack for at least 20 minutes. Serve hot or remove from pan and let cool completely.

- Preheat oven to 350°F. Beat eggs and egg whites with a whisk or mixer until thick.
- Add the juice, peel and milk and mix well to combine.
- Pour the mixture into the crust. Bake on center oven rack until center is set, about 20 minutes.
- Let the pie cool on the counter, then cover with plastic wrap and chill in the refrigerator for at least 2 hours. Spread the whipped topping evenly over the filling before serving.
3. Cinnamon Orange Lava Cake

- Place the butter, oil and chocolate in a pan, add to a pan of boiling water and mix until the chocolate is almost completely melted, stirring lightly with a spatula. Remove the bowl from the pan. Stir until chocolate is completely melted.
- Add flour, cocoa powder, and salt to a bowl and whisk. In a large bowl, combine the granulated sugar, brown sugar, vanilla, 1 teaspoon cinnamon, 1 tablespoon orange peel and an egg. Beat with a mixer on medium speed until light and fluffy (about 2 minutes). Set aside 3 tablespoons of melted chocolate mixture. Gradually pour the remaining chocolate mixture in a thin stream over the egg mixture, beating at medium speed.
- Gently fold the flour mixture into the egg mixture. Spray 8 (6 oz) ramekins with nonstick spray. Divide batter into ramekins. Working with one ramekin at a time, spoon 1 teaspoon of the reserved chocolate mixture into the center, pressing 1 teaspoon toward the center of the batter. Repeat with the remaining ramekins and chocolate mixture. Arrange the ramekins on a large rimmed baking sheet. Cover and refrigerate 1 hour.
- Preheat oven to 400°F. Let the ramekins sit at room temperature for 15 minutes. Uncover and bake for 14-15 minutes or until cake is puffy and slightly crispy on top (but not centered). Transfer each cake to a plate. Sprinkle with orange peel and cinnamon. Serve immediately.
