Here is one such example: This is bathuaoatsdhokla, a breakfast experiment. It looks pretty good in the first place. If you’re considering preparing at home, scroll down to understand the steps.
– Puree 1 cup of white goosefoot into fine pulp.
– Take ½ cup of rolled oats. You can roast them, but make sure you do it before the dish. If freshly baked, cool the oats. Then grind it into a coarse but fine powder.
– Add ½ sooji (semolina) and 1 cup card (slightly sour) to the bowl.
– Add white goosefoot puree and oat flour and mix well with the batter. It should not be too thick or too flowing. Therefore, add water carefully. It should be like Dosa batter’s consistency.
– Add cashew nuts, grated corn and carrots. You can also add grated lauki. Add salt and leave the batter for 30 minutes.
– In the meantime, prepare the steamer at the point of boiling water.
– Grease the pan with a ghee to prevent it from sticking to the dokura.
– Pour the batter and steam on medium heat for 20-30 minutes. Stick a knife to check, and when it’s clean, the dhokla is ready.
– For seasoning, dry roast mustard and curry leaves (much less oil is needed). Then add 4-5 drops of oil. You can use cold-pressed mustard oil to pour roasted seeds and leaves. When they scatter, season the Dhokla.
– Add coriander and coconut on top.
– Enjoy with mint chutney or coconut chutney.
