Earth Day is celebrated on April 22nd, and 69 News is celebrating early on by learning how what we eat affects the planet.
ShopRite’s registered dietitian, Morgan Laugier-Neiser, joined the 69 News Sunrise team on Saturday to showcase some recipes that have a positive impact on the planet.
Laugier-Neiser says he starts by eating more common plants, including beans and legumes.
She showed off a lentil-based sloppy joe with three colors of carrots, three colors of peppers, onions and garlic.
The ingredients are:
- 1 1/2 cup green or brown lentils
- 1 tbsp olive oil
- 3 pieces of garlic, chopped
- 1 carrot, finely chopped
- 1/2 cup of finely chopped peppers
- 1 cup of finely chopped green onions
- 1/2 Wholesome Pantry ™ Organic diced tomatoes
- 1/4 cup sugar-reduced tomato ketchup
- 2tbs Dijon mustard
- 2 teaspoons of chili powder
- 8 whole grain hamburger buns, split

- Prepare the lentils according to the instructions on the label.
- In a large frying pan, heat the oil over medium heat.
- Add garlic, carrots, peppers and onions. Cook for 5 minutes or until tender, with frequent stirring.
- Add juice, ketchup, mustard, chili powder, lentils, 1/2 cup of water, 1/4 teaspoon salt and black pepper to the tomatoes. Cook for 10 minutes or until slightly thickened, stirring occasionally.
- It will be about 5 cups.
- Toast bread; serve filled with a mixture of lentils.
Chef’s Tip: Use the rest of the lentil mixture as a hearty pasta sauce, add it to soups and stews, or add it to whole grain toast topped with poached eggs.
Dietitian Tips: Serve with frozen sweet potato fries and sautéed spinach to make your meal more comfortable!
