Recipe for roasted raspberry and coconut oats (for 3-4 servings)
material
- Oats 150g
- 9 tbsp low fat vanilla yogurt
- 12 tablespoons of boiling water
- 3 tablespoons of sweeteners such as stevia
- 3 tbsp dried coconut

Raspberry panette
- 1 teaspoon baking powder
- Squeeze the lemon juice
Method
- Preheat the oven to 200C / 400F / Gasmark 6.
- Blitz oats in a blender until floury.
- Put boiling water, oats, lemon juice and baking powder in a bowl and stir with a spoon to thicken.
- Add yogurt, sweets and coconut to a bowl and stir with a spoon. Fold it with raspberries.
- Pour the mixture into a 6 or 8 inch round cake can with a lining.
- Bake in the oven for about 30 minutes.
- Slice and serve with extra yogurt and fruit.
Make it vegan- Choose yogurt that does not contain dairy products such as almonds, soybeans, and coconuts.
Make it gluten-free- Use gluten-free oats and gluten-free baking powder.
