Ingredients (for 4 people):
- 2 cups chopped onion
- 1 cup diced red/yellow peppers
- 4 teaspoons minced garlic
- 2 cups sliced mushrooms
- 1 large chopped tomato
- 4 teaspoons chili powder
- 5 cups low-sodium vegetable broth
- ½ cup quinoa, rinsed
- 30 ounces unsalted beans, drained
- 4 cups chopped spinach or kale
Instructions:
- In a stockpot, sauté the onions and peppers in 2-3 tablespoons water until softened, 5 minutes.
- Add garlic. Sauté 30 seconds.
- Add mushrooms, tomatoes and chili powder. Stir until softened. Add broth. bring to a boil.
- Add quinoa, turn off heat and cover. Boil for 10 minutes.
