For most of us, the festive season is a luxury time.
And renowned chef Bridget Foliaki-Davis has covered you with her simple last-minute, flavorful dishes, including her freshly baked four-ingredient chocolate fudge recipe.
The three mothers, who cooked for Oprah and New Zealand Prime Minister Jacinda Ardern, provided a guide for planning a memorable festive menu.
To relieve the stress of cooking, the 47-year-old shared a dish that pleased five crowds.

Without baking, Bridget says she always makes her favorite dessert for Christmas-chocolate fudge.
“It’s very good, it’s dangerous,” she says. 7 lifestyle..
“It’s hard to stop on one piece, so you have to approach it carefully. It was so good, why would you be so healthy? That’s a great fudge trick.”
Her recipe features only four ingredients: almond butter, coconut oil, sugar-free, daily-free dark chocolate chips, and natural sugar alternatives such as erythritol and inulin powder.
“This is a very simple make, melt high quality sugar-free, dairy-free dark chocolate and add erythritol, a sugar-free table sugar alternative, before mixing with almond butter.” She says.
“In the end, almond butter creates a deliciously flavored fudge that melts in your mouth.
“Healthy chocolate fudge is just a bonus.”
Freshly baked chocolate fudge recipe
material
100g almond butter or your favorite nuts or seed butter
Coconut oil or MCT oil 50g
70g sugar-free, dairy-free dark chocolate chips
2 tbsp erythritol or inulin
Method
Place all ingredients in a small metal or glass bowl and place the bowl on a small pot filled with 5 cm of gently boiling water. Stir the ingredients with a spatula until the ingredients have melted and the liquid is smooth.
Place baking paper (I used a small rectangular plastic takeaway container) in a small container or dish and pour warm material into the container.
Cool the fudge in the freezer for 30 minutes or in the refrigerator for 60-90 minutes until it hardens. Slice into 12-14 pieces, divide and store in the refrigerator for up to 2 weeks.
Bridget says one of the dishes her children demand every year is duck fatty potatoes.
“Be sure to choose powdery potatoes that roast well, which helps to make a great crunch on the outside while being fluffy on the inside,” she says.
“Potato varieties such as King Edward and Sebago are excellent roasted potatoes.”
If you left your Christmas plans until the very end, Bridget shared some of her easy-to-make side dishes.
Bridget says the octopus salad was “recently added” to her family’s Christmas feast.
“Grown near the ocean, I experienced a rich version of a creamy octopus stew lightened for a table with fresh lime, small peppers, lots of mint and coriander,” she says.
The heirloom tomato salad often appears on her family’s dinner table.
“Tomatoes are ripe and abundant during Christmas time in our part of the world,” she says.
“Making the most of these seasonal gems means that the taste is great and the colors are spectacular.
“This simple dish is sliced tomatoes topped with fresh basil, goat cheese, mineral salt, pepper and extra virgin olive oil.”
Another reliable dish that always pleases the crowd is “asparagus lightly boiled in Hollandaise sauce, thanks to its simplicity and flavor.”
“I always choose the thinnest asparagus to make a dairy-free hollandaise sauce that won’t crack and hold up, and to ensure a soft, sweet side dish,” she says.
If you’re looking at the waistline on Christmas day, Bridget says you can enjoy a festive feast without sacrificing taste.
“Having a healthy Christmas doesn’t mean you have to rob yourself of what you like,” says the cookbook author. 7 lifestyle.
“Even at Christmas, healthy food doesn’t have to taste like cardboard. A small change in habits can make a difference in your waistline.”
Bridget says there are simple and easy tweaks you can make to create a “healthy” festive menu.
“Easy adjustments help give the Christmas feast so much flavor, freshness and health,” she explains.
“Make the most of seasonal ingredients such as cherries, avocados, asparagus and tomatoes and let them speak for themselves without the need to decorate with rich sauces and dressings.
“Get the most out of the coastal blessings with a bowl of fresh shrimp sprinkled with sea salt and pepper and a squeeze of lemon.
“Use the garden with fresh light and bright herbs such as basil, mint and coriander to give excitement and flavor to everything you touch.”
