Here are some recipes that are not only delicious, but healthy too.
SAN DIEGO — In honor of American Heart Month and National Go Red Day, Shawn has recipes that show we’re eating heart-healthy and not giving up on taste and look. Pro Tip: This Cajun Recipe is great for making fish tacos or chicken.
Cajun rockfish with sautéed spinach
- 4 fillets of rockfish or tilapia, catfish or firm whitefish
- 2 teaspoons paprika
- 1 tsp dried thyme, crushed
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper
- ¼ tsp.black pepper
- 2 tablespoons canola oil
- sliced lemon
- At least 2 handfuls of fresh spinach (8-12 oz bag)
- 1/4 white onion thinly sliced
- 1 slice of bacon, reduced salt
- 1 tablespoon olive oil
Whatever fish you go with, be sure to dry it with a paper towel. Preheat the oven to 425° and combine the seasonings in a separate bowl. Lightly coat the fish with canola oil and spread the rest on the baking sheet.
Season one side of the fish, place it face down on a baking sheet, and season the other side. Bake in the oven for 8-10 minutes, depending on the thickness of the fish. Be careful not to overcook the fish as it will continue to cook right out of the oven.
After a few minutes of cooking the fish, start frying the bacon in a large skillet over medium-high heat, adding the onions halfway through.
Add olive oil and spinach over medium heat and sauté until tender. Timing-wise, they should all finish at about the same time. Serve individually or in a large serving dish with a lemon wedge on the side.
