According to the Beef Checkoff, the following beef cuts are becoming more widely available in the United States or peaking this season.
1. Stewed meat: A classic full flavor. Great for slow cooking, chili and stews.
2. Chuck the short ribs. The crowd’s favorite short ribs are known for their richness and fleshyness — when cooked slowly, they become flavorful, moist and tender.
3. Flank steak: Lean and boneless with plenty of beef flavor. Great for marinating and grilling, or thinly slicing and frying.
4. Inside the skirt: This cut, on the other side of the outer skirt steak, is known for its firm flavor. For fajitas, marinated and grilled hot, or used for stir-fry.
5. Brisket Flat Half: The thin half of the whole brisket is also called the “first cut” and this full flavored meat can be sliced or chopped.
