According to chef Sanjeev Kapoor’s YouTube channel, the detailed recipes and ingredients for Mooli keparanthe are:

1 green radish
Whole grain flour 1½ cup + for dusting
Salt to taste
3 tsps Ghee + In case of drizzle
2-3 chopped green chilies
1/2 teaspoon red pepper powder
1 small onionChopped
1/2 teaspoon dry mango powder
Pinch Carom seed (Ajwain)
Yogurt to serve
Method
* Cut the top of the radish and chop the leaves into small pieces. Put the radish in a bowl, peel and grate. Sprinkle with salt, mix well and leave for 5-10 minutes.
* Put whole grains in a large bowl, add salt, 2 teaspoons and 1/2 cup of water and knead into a soft dough. Add the remaining ghee, knead again, cover and leave for 10-15 minutes.
* Squeeze the excess water from the grated radish with a muslin cloth and transfer to a bowl. Add green pepper, red pepper powder, chopped radish leaves and onions and mix well.
* Add dry mango powder and mix. Sprinkle with carom seeds, mix and set aside.
* Divide the dough evenly and shape each part into balls. Fill each bowl with a portion of the radish mixture. Sprinkle with flour and roll on a paratha.
* Heat the non-stick tawa, place the paratha, and cook for 1-2 minutes on both sides, applying ghee as needed.
* Transfer the paratha to a serving plate, sprinkle with ghee and warm with yogurt.
