At my husband’s request, I make turkey meatloaf at home at least once a month. There are many ways to switch it, so I love to be creative with it. This moist turkey meatloaf is studded with corn, black beans and green chilies and topped with enchilada sauce, jalapenos and cheese. Binder that holds the meatloaf together
To prevent the turkey meatloaf from falling apart, you need to use enough binder to keep it together. This recipe uses half-cup quick oatmeal and eggs. You can also use bread crumbs there.
At what temperature should meatloaf be cooked?
I cook turkey meatloaf at 350F for 55-60 minutes. The best way to make sure it is completely cooked is to use a meat thermometer that needs to read 165 degrees.

How to freeze:
Meatloaf lasts 3-4 days in the refrigerator and is ideal for freezing. You can make two to prepare the food. One is for dinner and the other is for freezing later. It takes about the same amount of time to double the recipe and the meat robes can be baked together.
To freeze, cool and slice the meatloaf. Then put the slices in a safe container in the freezer and put parchment paper in between to prevent them from freezing together. When you’re ready to eat, pull out as many slices as you need, thaw overnight in the refrigerator, and reheat in the microwave.

- Enchilada sauce: Make your enchilada sauce from scratch or buy a ready-made one to save time. The leftover sauce is delicious with chicken rice bowl, spaghetti squash and, of course, enchilada.
- Oats: Use the same amount of bread crumbs instead of oats. For low-carb, grain-free options, we recommend almond meal.
- beans: In the case of black beans, sub-focus beans or omit them if you are not a fan.
- Herbs: If you don’t like coriander, skip it.
- hot flavor: If your family doesn’t like spicy foods, omit the jalapeno above.

- 1 1/2 lb 93% turkey minced meat
- 1/2 cup Quick oats, * Check the gluten-free label
- 2 Tbsp Mild enchilada sauce
- 1/2 cup Chopped green onions
- 1/3 cup Corn grain, Fresh or frozen
- 1/4 cup Canned reduced sodium black beans, Rinse and drain
- 1/4 cup Chopped coriander, Further for garnish
- Four Ounces You can make chopped green pepper mild, Well drained
- 1 cloves Crushed garlic
- 1 big egg, Beaten
- 1 1/2 Teaspoon Kosher salt
- 1 1/2 Teaspoon Ground cumin
- 1 tea spoon Onion powder
For toppings:
- 2/3 cup Mild enchilada sauce
- 1/3 cup Mexican cheese blend
- 1 Thinly slice jalapeno, option

Preheat the oven to 350F. Spread the parchment paper on the sheet pan.

In a large bowl, mix turkey minced meat, oat barley, 2 tablespoons of enchilada sauce, green onions, corn, beans, green onions, garlic, eggs, salt, cumin and onion powder.

Use clean hands to combine everything well, then shape the sheet pan into an oval pan with a flat top so that you can add the sauce and cheese later.

Bake for 55-60 minutes until fully cooked.

Remove from the oven and top with the rest of the enchilada sauce, cheese and jalapeno.

Bake for about 5-10 minutes until the sauce is hot and the cheese melts. Decorate with coriander as needed. To serve, transfer to a chopping board and slice into 12 slices.
