Swap option: This recipe uses skinless salmon. You can use the remaining cooked salmon or quickly pan-fry the fillet in the following easy way. Add 1 tablespoon of olive oil to the frying pan (or sprinkle a generous amount of olive oil spray on the frying pan) and heat over medium to high heat. Season both sides of the salmon fillet with salt and pepper, and cook on one side for about 4 minutes if you like.
Preparation
1.1.
Add chopped spinach to the bottom of the bowl.
2.2.
Place the salmon fillet on the spinach and use a fork to push it down to grind the meat.
3.3.
Add a clean pile of beans, corn, tomatoes and red onions on top.
4.4.
Sprinkle with barbecue sauce and mix everything. If necessary, add 1-2 teaspoons of fresh lime juice and salt and pepper to taste. If used, sprinkle with chopped almonds and fresh herbs.
