If you need a healthy, hearty and delicious weekday recipe, you don’t have to look for it anymore. These stuffed peppers are easy to prepare and can combine all the important food groups into one plate.

1 pound of minced beef

1 white onion

Preparation:
Preheat the oven to 400 degrees.
Next, dice the onions into a pan and fry in butter.
While cooking the onions, bring a cup of water to a boil. When it boils, reduce the heat to low, add 1 cup of quinoa and cover.
While both are cooking, cut off the top of the pepper and a little on the bottom to help it stand up. Also clean the middle of the pepper. Place it in a non-stick pot and will come back later.
When the onions are tender and brown, add the minced beef to the pan. While cooking the minced beef, put the peppers in the oven to soften them.
Drain water from a can of diced tomatoes. Once the ground beef is cooked, add the diced tomatoes to the pan.
Remove from heat and add quinoa.
Mix the mixture and scoop into pepper using a small spoon. Put it back in the oven for a few minutes. Now you are ready to serve.
option: Add the cheese on top and put it back in the oven to melt the cheese on top.
