1 small butternut squash, peeled + cube (about 1 lb)
1 tbsp extra virgin olive oil
2 tablespoons of homemade jerk seasoning (recipe below)
Homemade jerk seasoning
1 tablespoon onion powder
1 tablespoon garlic powder
2 teaspoons of cayenne pepper
2 teaspoons of salt and peppercorn
2 teaspoons drying time
2 teaspoons of brown sugar
1 teaspoon of all spices
1 teaspoon of dried parsley
1 teaspoon paprika
1/2 teaspoon red pepper flakes
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon cumin
Roasted vegetables
2 lbs baby you component (see note)
1 lb Brussels sprouts, half
8-10 mini peppers, half
1/4 cup extra virgin olive oil
1 1/2 tablespoon sea salt
1 1/2 tablespoon black pepper
1 1/2 tablespoon of dried oregano
1 1/2 tablespoon dried basil
1 1/2 tablespoon garlic powder
1 1/2 tablespoon of dried parsley
1 1/2 tbsp smoked paprika
1 teaspoon red pepper flakes
Light stew peas:
1 tbsp extra virgin olive oil
1 (15 oz.) Green beans, drainer + rinse can
1 carrot, peeled and chopped
1 1/2 cup full fat coconut cream or milk
2 tablespoons of organic vegetables
2 pieces of garlic, chopped
