Rebecca Gawthorne, Sydney’s mom, known online as Nourish Naturally, says her slices are “packed with healthy ingredients”, adding a twist to the classic taste.
Rebecca begins making a base by putting a cup of almond meal and half a cup of oats or almond flour in a food processor.
The nutritionist shared a recipe for “healthier” cookies and cream ice cream slices. It’s easy to make and perfect for summer. “It’s packed with healthy ingredients.” It’s a classic taste with a twist.
Next, she adds 3 tablespoons of cocoa powder and 2 tablespoons of yogurt to the flour mixture.
The nutritionist then adds a date with six holes to the food processor. It was softened with previously boiling water for 5-10 minutes and then drained.
She mixes the mixture in a food processor until she mixes it, then pushes it into a lined baking can and sets it aside.
Rebecca begins to make a base with almond meal, oats, cocoa powder and yogurt, dates the food processor and blends the mixture. Once combined, push the base into the can.
To make a layer of ice cream, she adds 1 cup of soaked sunflower seeds, 1 cup of yogurt, 1/4 cup of coconut oil and 4 cups of vanilla extract to the blender.
Then blend until the cream is smooth and mix in half a cup of cocoa nibs or dark chocolate.
Rebecca pour the cream mixture over the base and put it in the freezer for at least 4 hours to harden.

Once set, she slices it into 12 pieces, thawes for 5 minutes and then serves.
