Nutritionists shared a recipe for a low GI breakfast burrito to help kick start the day in a healthy and flavorful way.
Rebecca Gawthorne, who lives in Sydney and uses “Nourish Naturally,” states that her Low GI recipe is a “great breakfast option” and “provides sustainable energy.”
Rebecca begins the recipe by first heating a tablespoon of extra virgin olive oil in a frying pan over medium heat.
The nutritionist shared a low GI breakfast burrito recipe to help you kick off the day. She starts by cooking onions, mushrooms, beans, eggs and tofu in a pot.
Next, add half of the finely diced brown onions to the pan and fry for 3 minutes.
Then add half a cup of sliced button mushrooms, a quarter cup of refried beans, one large beaten egg or 50 grams of hard tofu to the pan.
She cooks this for another 5 minutes and holds a fork to “fluffy” the eggs and tofu.
Then, in a small bowl, grind half of the avocado and mix with lime juice, diced cherry tomatoes, finely chopped parsley or half a cup of coriander to assemble a delicious wrap.
Towards the end of the cook, Rebecca puts a cup of baby spinach, stirs, and sets aside the burrito mixture.
