USU Extension’s Distinguished Consumer Educator Teresa Hunsaker is back. Heading into this new year, I wanted to focus this week on how to eat healthier. Teresa, what are your tips to get us started?
Teresa Hunsaker: Our bodies are craving a new norm after eating high-fat, possibly high-sugar foods on vacation, so there are only six basic things people should keep in mind. I think.
So the first tip I have is to eat more simply. Keep things simple by cutting back on creamy sauces and gravies, high-fat foods, high-sugars, and more vegetables, fruits, and whole grains. increase.
The second is to reduce processed foods and make them from scratch. And it’s probably like going back to more raw vegetables and raw fruit platters, and having whole-grain pasta dishes instead of traditional pasta.
And another thing we all know is planned meals. Sit down and think about quick breakfasts, quick lunches, and quick snacks.
Drink plenty of water and plan and prepare some foods ahead of time, such as carrot sticks, celery sticks, and snack foods like jicama.
And find ways to make moving a little more fun. There are so many fun things you can do in winter. Even exercise and outdoor activities can get your body back on track and move a little more.

Teresa Hunsaker: The first one I have to give you is one of our family’s all-time favorites, and it’s my Pepper Pork Lettuce Wraps.
So make a simple dressing of light mayonnaise, skim milk and minced garlic and whisk it together. — in some strips. Sauté it and add some ground pepper with a little oil. While sautéing, add jars of roasted red peppers. That’s it for the stuffing.
Next, take a lettuce leaf, put some green pepper on the lettuce leaf, chopped cucumber, sliced radish, some sliced red onion and top with zucchini noodles (zoodles). Then sprinkle that mayo-garlic-like sauce on top and wrap it up. defect. It’s so fast, so easy, and so delicious.
I also wanted to introduce you to two simple salads. One of them is black bean quinoa and avocado salad. Again, it’s really easy. Arugula, baby kale, rinsed and drained black beans, avocado, Roma tomatoes, red onions, cilantro, zucchini, cooked quinoa, sweet corn, and a simple lime and olive oil dressing. Again, there are recipes, but this works quickly.
And this other one, originally an Arizona girl, who always talks to me, is a citrus and vegetable salad. It has blood oranges, navel oranges, really sweet pink grapefruit, lettuce leaves or spinach. I like spinach, but you can use whatever you like best or the cheapest you have on hand, such as beet greens, endive, baby kale. finely chopped dry white cheese.
The dressing is orange juice, orange peel, olive oil, and a little rice vinegar. Anyway, his two salads and the peppered pork wrap are delicious. I think people really enjoy them.
