Brinkley Erb loved to eat pancakes, but her allergies kept this popular breakfast food off her plate.
One morning she decided to try a gluten-free pancake recipe.
“I got inspired by some recipes and started googling and experimenting,” says Erb. “I finally put the recipe together and loved it.”
Now you can enjoy her ‘Good Flippin’ Pancakes’ made with simple, all-natural ingredients like bananas, oats and cinnamon.
Her healthy and delicious pancakes can be found in the frozen food section of grocery stores all over Memphis.

A healthy twist on your favorite breakfast
Erb first learned the recipe in 2020. Over the next year, she regularly made healthy pancakes to share with her friends and family.
This year she decided to turn her delicious pancakes into a business.
“I had one of those light bulb moments when I saw someone making a homemade crust,” Erb said. , These pancakes are even better frozen, as they become crispy on the outside when toasted.”
Erb said she started selling her pancakes to yoga clients to see if she could make a business out of it. Her client loves pancakes, so Erb decided to rent her commercial kitchen spot at her Memphis Kitchen Co-op.
Erb officially launched Brinkley’s Foods earlier this year with her sister Connell Erb and stepfather Tom Sikes.
While all three are in the kitchen, Brinkley is in charge of recipe development, what she calls “designated pancake flippers.” Meanwhile, Connell designs packaging and marketing materials, and Tom handles business paperwork.
The family said their company is on a mission to provide a whole new kind of food—real, pure food—in a fast and convenient way.
Pancakes are currently available in original flavor and blueberry.
Crispy on the outside and fluffy on the inside, these frozen pancakes are ready in minutes in the toaster and are completely sugar, dairy and gluten free.

Erb said they are working on additional flavors of pancakes and a new product, Baked Oat Bite. “It’s not a granola bar, it’s not a muffin, it’s not a cookie. It’s a delicious combination of the three,” she said.
Frozen pancakes can be found at stores such as High Point Grocery, South Point Grocery, Curb Market, Cordelia’s Market, Grind City Grocery, and Big River Market. Each bag retails for approximately $7.99.
“Our slogan is ‘Let’s eat more pancakes,'” Sykes said. “Pancakes don’t have to be unhealthy.”
“But serve with pure maple syrup,” said Erb. “Grocery store pancake syrup is full of sugar and preservatives.”
