I don’t know what to do with the recent Marble City Market. The downtown food hall got off to a strong start, but many of its original vendors have left since its debut. Some vendors have reportedly left due to conflicts with MCM’s management. Po’ Richard’s Sandwiches, The Corners Pizza, Fantail Fish & Frittes, Paysan Sandwich Shop, and L&O Barbecue were among the original eateries I reviewed earlier this year, but have been flying coops ever since.
Several new vendors, including KatiRoll Wala, who didn’t impress last summer, have since signed on at Marble City Market. So the only MCM restaurants he hadn’t tried yet were Brooklyn-based taqueria Alta Calidad and Valley Fresh Kitchen. Grub Spouse and I stopped by the food hall last week with the intention of checking them both out. However, as soon as I arrived, I learned that Alta Calidad had ceased operations after only a few weeks of operation.

As a result, The Spouse and I decided to split the menu with Valley Fresh, located in the stall previously occupied by The Corners Pizza. Soups, salads, and sandwiches are included. Tomato bisque and potato soup is always on the menu, and an employee working the counter that evening told me that broccoli cheddar was the seasonal recipe for the day.
Greens include Garden Salad, Caesar Salad, and Strawberry Salad, available in regular-sized or smaller side salad portions. There are also pasta and fruit salads, as well as non-green salads such as chicken and tuna salads, the last two of which are used in the composition of Valley Fresh’s sandwiches. Their sammies are made with lettuce and tomato on toasted Pullman bread and are served with a 2-ounce sample of soup each.
I decided to take advantage of the Pick Two option, which allows you to choose two items from a soup, salad, or half sandwich for $10. Broccoli cheddar soup with seasonal vegetables, cucumbers, red onions, yellow peppers, tomatoes, oregano, pickled bananas, croutons, kalamata olives, and Greek vinaigrette based on employee recommendations.

Our wait was on par with what we’ve experienced at MCM in the past. That’s when I discovered my cup of soup was tomato bisque, not broccoli cheddar. The generally very friendly and helpful employee was also very apologetic and immediately acted to remedy the situation, only to discover that the broccoli cheddar was not the actual seasonal flavor of the day. It was minestrone. I allowed her to give me a glass of it instead, especially since her spouse had already sampled the bisque.
We finally settled down and ate. The sandwich was very good. The chicken salad itself also tasted fresh and the toasted bread was delicious. It’s hard to gauge a soup based on a 2-ounce thimble, but the tomato bisque seemed like a decent effort. It didn’t seem like it, but I thought the Greek salad was delicious. Minestrone was satisfying with plenty of vegetable soup and pasta.
Valley Fresh Kitchen is the choice for MCM diners looking for fresh, healthy food. I found the grub to be useful despite the soup confusion and the lack of salad toppings. Marble City Market keeps pace, but who knows which stalls will be occupied by which eateries the next time I visit?
