Indian pickles are huge fans not only in India but around the world. Achar’s eclectic flavors are enough to spice up a bland meal. We all love achar, but our brains go into a frenzy when we see a thick layer of oil floating on top of it. For such people, we have prepared a recipe for completely oil-free achar. This garlic pickle is full of flavor and spice, but oil and salt free. Still fragrant and delicious.
I found this oil-free garlic pickle recipe on my YouTube channel Cooking With Reshu and found it to be great for my weight loss diet. This achar is made using traditional techniques where all ingredients are mixed and soaked in an acidic liquid for several days to ferment. The combination of garlic, ginger, kalonji and whole red chilies is really great. But don’t forget to roast the kalonji first. This is because it gives off an invigorating aroma that makes this ashar recipe irresistible.
Here’s a step-by-step recipe for oil-free garlic pickles.
Non-Oil Garlic Pickles Recipe I How to make non-oil raisin achar:
Take 200 grams of garlic, peel and dry thoroughly. Peel the ginger and cut into small rounds. First roast the kalonji for 2 minutes. Place whole red pepper in a bowl. Add garlic, ginger, and raw dried mango, also known as hattay. Add ganna (sugar cane) sirka and kalonji to taste. Mix everything well. Store the mixture in a jar for 10 days. Stir once daily. Please enjoy as a snack after 10 days. If you like, sprinkle with salt when serving.
