Tuesday tacos are a long-awaited family favorite for many households and, with the right recipe, can also be one of the healthiest dinners of the week.
Clinical nutritionist Sara Di Lorenzo shares her recipe to make a delicious and wholesome Mexican fiesta.

Easy chili con carne with cauliflower rice
4 servings
material
- 1 chopped brown onion
- 400g ground beef
- 1/2 teaspoon chili powder
- 400g can of red kidney beans Drain and rinse well
serve
- 1/2 cup fresh coriander
- 4 tablespoons Greek yogurt
salsa
- 2 cups chopped cherry tomatoes
- 1/2 red onion chopped
- 2 cloves minced garlic
- 1 cayenne pepper
- 1 lemon juice
- 1/2 teaspoon cumin
- 1 tablespoon maple syrup
- 1/2 cup chopped fresh coriander
Method
- Fry the onions in a frying pan, add the minced meat and chili powder, add the kidney beans and salsa, and simmer for about 20 minutes.
- Serve over cauliflower rice and top with fresh coriander and Greek yogurt.
- To make cauliflower rice, run 1 cauliflower in a food processor or use a cheese grater to make rice. Next, put 1 tablespoon of olive oil in a frying pan and heat it for 5 to 8 minutes.

- juice of 1 lime
- 1 tablespoon olive oil
- 1 clove of minced garlic
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 2 tablespoons freshly chopped coriander
- 4 chicken thighs
- 2 peppers cut into strips
for bowls
- 2 cups chopped lettuce
- 200g corn kernels
- 200g washed black beans
- 1/2 chopped red onion
- 1 sliced avocado
dressing
- 2 tablespoons olive oil
- juice of 1 lime
- 1 tablespoon chopped coriander
- 1 clove of crushed garlic
- 1 teaspoon honey
- 1/2 teaspoon cumin
- a pinch of salt
- chili flakes (optional)
Serve with 2 cups of your favorite seasoned rice.
Method
- Add lime juice, chicken, oil, garlic, cumin, salt, chili and coriander and marinate for half an hour.
- Heat a frying pan and add 1 teaspoon of olive oil. Broil the chicken, cook until cooked through, and set aside. Next, add the paprika to the frying pan and sauté, then season with salt and pepper to taste.
- Place the dressing ingredients in a jar and shake well.
- Assemble lettuce, beans, corn, onions, and onion bowls into four bowls or one large bowl. Slice the chicken.
- Dressing after topping with avocado.
Healthy nachos with minced turkey
Serves 4-6 people
material
- 1 tablespoon olive oil
- 1 chopped brown onion
- 500g minced turkey
- 1 teaspoon ground cumin
- 2 teaspoons ground coriander
- 1/2 teaspoon chili powder
- 1/4 liter beef stock
- 400g can of red kidney beans
- 2 tablespoons tomato paste
- 1 cup Greek yogurt
- 1 clove of garlic
- 1 teaspoon finely grated lime peel
- juice of 1 lime
- 1 finely chopped avocado
- 2 chopped tomatoes
- 1/2 cup chopped fresh coriander
- 2/3 cup grated mozzarella cheese
- 8 whole grain tortillas
Method
- Preheat oven to 200°C. Spray whole-wheat tortillas with oil, bake until golden brown, and cool.
- Heat the oil in a frying pan, fry the onions until translucent, add the turkey and fry until golden brown. Add the cumin, coriander, and chili, then add the beef stock, beans, and tomato paste and simmer for 10 minutes.
- Place the yogurt, garlic, zest and juice in a bowl and add the avocado, tomato and coriander.
- Arrange tortilla chips on a platter, add mince, mozzarella cheese, place under grill until cheese melts, add avocado mix and top with lime yogurt.
Note – you can also buy tortilla chips for your convenience.

- 400g minced chicken
- 1 tablespoon olive oil
- 2 carrots, chopped
- 1 zucchini
- 8 soft-shell or hard-shell or lettuce leaves
- 1/4 cup chicken stock (water is fine if you don’t have stock)

- chopped lettuce
- cut tomato
- Avocado
- olive
- beans
homemade taco seasoning
- 3 tbsp chili powder
- 2 teaspoons ground cumin
- 2 teaspoons garlic powder
- Onion powder 1 teaspoon
- 1 teaspoon sea salt
- 1/2 teaspoon cayenne pepper
Sarah’s salsa
- 1 cup chopped cherry tomatoes
- 1/2 cup chopped coriander
- 1/2 chopped red onion
- juice of 1 lime
- salt and pepper
- 1 chopped avocado
Method
- Grate carrots and zucchini on a cheese grater. Add the chicken to the pan and fry.
- Then add shredded vegetables, chicken stock and taco seasoning and simmer 10 minutes.
- Top your tacos with your favorite filling and salsa.
