The main ingredients in sarson da saag are fresh mustard leaves (chopped), fresh spinach (chopped) and batua (white rubiaceous plant) leaves. Note that the ratio of saag is 2 parts mustard leaves, 1 part spinach and 1/2 batua.
You’ll also need cornflour, butter, minced garlic and ginger, minced onion, minced green chillies, and two tablespoons of mustard oil. Don’t forget the diced broccoli. Yes you read that correctly. Shilpa’s Sarso da Saag recipe has a broccoli twist. Adding broccoli, Shilpa says, “broccoli adds texture to the sag.” Apart from its consistency, broccoli also greatly enhances its nutritional value.

how to cook
Add a cup of water to the pot and put green leaves one after another into the pot. Simmer over medium heat for 45 minutes. Then add the diced broccoli and let it cook for a while.
Turn off heat and slowly add cornflour. Be careful not to throw it all in at once. Add the corn flour slowly so that the leafy elements bind together and give the dish a nice consistency rather than being runny.
Cook the blended mixture for a few more minutes.
Heat 2 tablespoons of mustard oil in another pan and add minced ginger and garlic. Add onions and green chillies and fry for a while.
Time to add some sag.
Finally, add tomatoes and salt to the mix. Cover and heat for an additional 2 minutes.
A drizzle of butter before serving.
