Drummond demonstrated how to make a Cajun veggie pasta recipe in one episode. pioneer womancalling it a “tasty, fast, family favorite.”
She prepared the vegetables and added them to a hot skillet with olive oil and butter. “Since this is Cajun food, I keep the skillet super hot, and hopefully I want the edges of the vegetables to be nicely blackened,” she explained.
Drummond added a Cajun spice mix that included mushrooms, red peppers and bell pepper strips, minced garlic, cayenne, paprika, and garlic powder. “You can absolutely make your own if you want,” she pointed out. “I’ve done it in a pinch.”
While the vegetables were cooking, Drummond boiled the pasta. “If I have fettuccine in my pantry, I usually try to make fettuccine. I make a version of this pasta with chicken. Cajun chicken pasta and I always use fettuccine. is.”
The Food Network host added sliced zucchini to the veggie skillet and even added Cajun spices. “I’ve been waiting until now to add this because I don’t want it to be mushy,” she shared. “
‘Pioneer Woman’ star makes creamy sauce with ease
pioneer woman The star got to work on the sauce for the dish. She added the broth to the vegetables, stirred the mixture, and cooked for a few minutes until half cooked.
Drummond then added the heavy cream. “I need the cream to thicken, so I want the skillet to be really hot when I put the skillet in,” she said. “I think every pasta dish needs a cream ingredient.”
She let the cream sauce thicken for a few more minutes before adding diced Roma tomatoes.
The Food Network host drained the pasta, added it to the sauce, tossed the noodles to coat everything, and sprinkled it with scallions and parsley before serving.

Lee Drummond cooks a chicken version of the dish
As she mentioned on her cooking show, Drummond also makes a recipe for Cajun chicken pasta. She wrote about her cooking in a 2011 blog post on her Pioneer Woman website.
“This is one of my favorite recipes here at Pioneer Woman Cook, and I hear it regularly from people who have had great success with it,” she wrote. “
Drummond calls this recipe “a very tasty decadent pasta dish with lots of chicken, veggies and delicious carbs.” The Food Network host says, “It’s easy to toss together. If you don’t have Cajun spices ready in your cabinet, you can toss a few spices together to create your own combination.”

The Food Network host’s chicken version is similar to her veggie pasta recipe, but omits the mushrooms and adds red onions and white wine.
