AAs part of their mission to educate Oklahoma and make healthy choices, Shape Your Future has partnered with Tulsa Kids to hold a contest to find young chefs who can create healthy and delicious recipes packed with fruits and vegetables. I did it.
Shape Your Future encourages everyone to fill half a plate with fruits and vegetables with every meal, and the work of 13-year-old Nigel Jacob got a lot of attention.His recipe Grilled Pineapple-Mango Shrimp Kebab, Rainbow Cheese and Fruit Salad Is a winning combination of lean protein, fruits and dairy products, filling the plate with colorful and healthy foods that kids love.
Young people like Nigel can pave the way for a bright future for Oklahoma. The state has some of the highest child and adult obesity rates in the United States ShapeYourFuture wants to change its stats by educating all Oklahoma people about making healthy choices. They tell their families that in addition to eating fresh fruits and vegetables and drinking plenty of water, children need 60 minutes of exercise per day and adults need 30 minutes per day. TK: How long have you cooked and what do you like to cook?
Nigel: I’ve probably been cooking since I was seven. My favorites are fried rice and curry beef flor.
TK: Where did you get the inspiration for the winning recipe?
Nigel: Simple, healthy and fun, the fruit salad is colorful and delicious!
TK: Is this your first time thinking about a recipe?
Nigel: No, I like to make recipes often.
TK: Have you ever had a disaster in your kitchen?
Nigel: Yes, a few years ago, I almost burned the entire kitchen with just microwave-cooked popcorn. Our house smelled like burnt popcorn for days.
TK: Shape Your Future focuses on encouraging families to lead a healthy lifestyle. How do you think planning and cooking your own meals at home can help you eat healthier foods?
Nigel: The more often you eat at home, the less likely you are to crave fast food and make unhealthy choices. When you cook your own food, you can choose your ingredients and also choose healthy options.
TK: What advice would you give to other children who might want to learn to cook for themselves and their families?
Nigel: Always get the help of your parents, especially if you are cooking for the first time. And you can make it fun too, and maybe at least once a week. Don’t be afraid to try new recipes, add new ingredients, or create your own recipes. Be creative.
TK: What do you want to do other than cooking?
Nigel: Lots of things. Spend time reading, coding, golf, basketball, table tennis, piano, pool, video games, traveling, friends and family.
TK: Do you have any immediate goals you want to achieve? What do you want to do in the future?
Nigel: First, like my sister, I want to start taking flight training right away and learn how to fly by the age of 16. [I want to] He continues to perform well and is accepted by Ivy League schools. I’m looking forward to Harvard Medical. I want to be a neurosurgeon.
TK: Please tell us some interesting facts (or two) about you.
Nigel: I was able to climb the top of one of the Giza Pyramids. When I visited Germany in 2019, I have a part of the Berlin Wall.
Grilled Pineapple-Mango Shrimp Kebab
material
- 2 teaspoons of soy sauce
- 4 teaspoons of hot sauce of your choice, optional (I like spicy so I always add it with Tabasco’s original red sauce).
- 1/4 cup of freshly squeezed orange juice
- 1/4 cup of freshly squeezed lime juice from about 2 large limes
- 1 lb large shrimp (31-40 counts), peeled and refined (fresh or frozen thawed shrimp can be used).
- Mango Chunk (Use a pre-cut frozen mango bag and thaw first.)
- 3/4 lb pineapple chunk, cut into 1 inch cubes
- Canola oil for grill
- Served with chopped coriander and / or green onions
Instructions
In a medium bowl, combine Tabasco sauce, soy sauce, orange juice, and lime juice. Add shrimp and toss and coat. Cover and place in the refrigerator, marinade for 1-2 hours and mix occasionally. If using wooden skewers, soak in warm water during the marinade of shrimp. Meanwhile, prepare the pineapple as needed.
Preheat the grill to medium heat. (I used the grill with my mom’s help, but you can also use a stove or oven for this recipe.)
Remove the shrimp from the marinade and reserve the marinade for the grill. Skewer the shrimp alternately with pineapple and mango. Skewer your favorite vegetables. I like to add squash.
Lightly polish the grill with canola oil, then place the shrimp kebab on the grill. Grill the shrimp for 3 minutes, brush with marinade, then spin and cook for another 2-3 minutes, then marinade again until the shrimp is completely cooked. Transfer to a serving plate and decorate with coriander and green onions.
Serve 4
Rainbow salad
Rainbow salads are fun to make and not only look colorful on the plate, but also get plenty of healthy fruits and some low-fat dairy products. Be sure to get the help of your parents when cutting. We use strawberries, oranges, cheddar cheese, blueberries and grapes. Place in iridescent on each plate. fun!
