Frozen yogurt berry bites
make: 6 servings / Preparation time: 20 minutes / total time: 30 minutes (and freezing time)
¼ cup of crushed almonds or almond meal
4 tablespoons sugar, split
2 tablespoons butter, melted
¾ Cup plain fat-free Greek yogurt
1/4 teaspoon vanilla
1½ cup of fresh chopped strawberries, raspberries, blueberries (or your favorite combination of berries)
Line the 6-cup muffin tin with a silicone or parchment cupcake liner, or use a non-stick muffin tin.
In a small bowl, stir crushed almonds, 2 tablespoons of sugar and butter together. Spoon a small amount into the bottom of each muffin cup. In a medium bowl, mix yogurt, vanilla and the remaining 2 tablespoons of sugar.
Spoon 2 tablespoons of the mixture into each muffin cup and cover the crust. Place the chopped berries on top. Freeze for about 6 hours until it hardens. To serve, remove from the muffin tin and / or wrapper and leave at room temperature for 8-10 minutes.
