Upon contact with hot frying oil, the food loses water, absorbs oil and lipids. Exchange for frying oil. Free-to-eat fried foods can have high absolute intakes of foods with high energy density and low satiety index. Relatively low fat satiety index is with insulin. Refined oil
Refined oils such as sunflower oil, mixed oils, and soybean oil are high in omega-6 fatty acids, which can increase insulin resistance and leptin resistance. The American Journal of Clinical Nutrition states that oils rich in omega 3 fats, such as olive oil, canola oil, and flaxseed oil, are resistant to oxidation but less resistant to insulin and leptin.
