Wild Planet Albacore Tuna Windmill

Choose between 1 avocado, mashed potatoes or 4 tablespoons hummus
Two flour tortillas or gluten-free wrap
1 can (5 oz) Wild Planet Albacore Wild Tuna, no drainage
1 lemon juice
1 cup of spinach
1/2 cup of shredded carrots
1/2 cup cucumber sliced cucumber
Instructions
Spread either the mashed avocado or hummus in two tortillas / wraps. Put the wild albacore tuna in a bowl, crush it and re-incorporate the juice. Add lemon juice and mix. Layer the same amount of spinach, carrots and cucumbers in succession towards one end of each tortilla / wrap. Roll up / tightly wrap each tortilla and cut into 1/2 inch to 1 inch slices. If necessary, secure each with a toothpick.

6-8 large green or red leaf lettuce leaves
1 Bottle Wild Planet Albacore Wild Tuna Fillet or 1 Can (5 oz) Wild Planet Albacore Wild Tuna
1 can of extra virgin olive oil, extra virgin olive oil with lemon, or wild planet wild sardines in marinara sauce
1/4 cup pit Kalamon olives
A bottle of marinated artichoke hearts, drain
Marinated mushrooms 1/2 cup
Half of two roasted red peppers, sliced into 1/4 inch wide strips
4 grilled eggplants, cut into 1 inch strips
Grilled four large pieces of zucchini and / or yellow pumpkin,
Cut into 1 inch strips
1 small sliced fennel bulb
1 cup of a small bowl of fresh mozzarella cheese
1 cup of cherry tomatoes, half
Shred 1/4 cup fresh basil leaves into small pieces
1/4 cup caper, drainage
Olive oil and red wine or balsamic vinegar
Instructions
Arrange the lettuce leaves on a platter. Remove the tuna from the jar or can and hold the liquid. You can gently crush the tuna into bite-sized pieces, line it up on one of the lettuce leaves, drip the liquid from the jar, or place it on top of the tuna. Remove the sardines from the can and leave olive oil or marinara sauce. Gently break it into bite-sized pieces and place them on a platter with the tuna. Sprinkle olive oil or marinara sauce from the can over the sardines. Continue around the platters with olives, artichoke hearts, mushrooms, roasted peppers, eggplants, zucchini, yellow pumpkins, fennel, mozzarella balls and tomatoes. Sprinkle basil and capers all over. Serve with oil and vinegar.
