Celebrating Cinco de Mayo is traditionally celebrated in the United States with tacos and margaritas.
They are DELISH, but they are not always the healthiest option.
Michigan’s registered nutritionist Shanti Apero’s Blue Cross Blue Shield participated in “four” live concerts with a fresh and healthy take of Mexican-American favorites.
Lightly breaded grilled tilapia tacos – 4 servings
material
- 8-12 ways of taco tortillas
- 2 big or 4 small tilapia fillets
- 1 tbsp olive oil
- Bread crumbs 1 cup of bread crumbs
- 2 tsp cumin
- 2 teaspoons garlic powder
- 1 teaspoon dried oregano
- The taste of salt and pepper
- 2 cups of shredded lettuce
- 4 Roma tomatoes, diced
- Pickled onions (in this) recipe).
- Coriander lime yogurt crema (recipe below)
- 3 limes, wedges for serving
Instructions
- Preheat the oven to 425F degrees. Prepare a lined top plate.
- Put bread crumbs, cumin, garlic powder, oregano, salt and pepper in a bowl. Tap the tilapia fillet to dry and polish with olive oil. Soak both sides of the fillet in the breadcrumb mixture and push to harden. Place it on a lined top plate.
- Bake the tilapia for 8-12 minutes or until it is completely cooked. Toast or grill the tacos while the tilapia is roasting.
- Toasted street tacos with finely chopped lettuce, diced tomatoes, pickled onions, coriander lime yogurt crema and freshly squeezed lime, and a little tilapia.
Coriander-Lime Yogurt Crema
material
- ½ Jalapeno, seed
- 2 pieces of garlic
- 1 lime, juice
- 1 cup 2% Greek yogurt
- 1 cup of fresh cilantro
- 1½ teaspoon.cumin
- 2 tablespoons.water
- The taste of salt and pepper
Instructions
- option Step – Add garlic and jalapeno to a small pan over medium to high heat until lightly browned.
- In a blender or food processor, add all the ingredients and blend until smooth. Dress up fish tacos in the light rain of Crema.
Watermelon Mentha Agua Fresca – for 6-8 servings
material
- 1 cup of filtered water
- 3 cups of watermelon, cube
- 1 lime
- Mintha leaf ¼ cup
Instructions
- In a blender, add watermelon, water and lime juice.
- Add 2-3 mint leaves to each glass and mix before serving. Add ice, pour into a mixture of watermelons and stir. fun!
